I love Hungarian goulash! You too ?? Goulash, (Maďarský Guláš) the traditional dish of Hungary, was prepared by Hungarian shepherds as far back as the 9th century At least, that’s how it’s now known.
Several days ago, during one of my blog-hopping around the internet, I came across this amazing article at The cozy apron which outlines a new twist on a great staple, Beautifully colorful Hungarian-style red potatoes are the perfect accompaniment to a Smoked Sausage and Savory Caramelized Onions. Saucy Hungarian Red Potato Goulash from The Cozy Apron

Ingredients

  • • Olive oil
  • 1 (14 ounce) smoked sausage, sliced on the bias into thin medallions
  • 2 tablespoons butter
  • 2 onions, quartered and thinly sliced
  • 1 garlic clove, pressed through garlic press
  • • Salt
  • ¾ teaspoon freshly cracked black pepper
  • 1 ½ teaspoons paprika
  • 10 medium-size red skin potatoes, peeled and sliced into ½” thick circles (about 2 ¾ lbs)
  • 1 ½ cup chicken stock
  • 1 tablespoon chopped flat-leaf parsley
