I love anything that has to do with cheesecake. I mean who doesn’t? This is probably my favorite fruit type of cheesecake right now. I love it because it is so delicious, easy to make and it makes the most perfect delicious treat. It is always a huge hit and I’ve had several people ask for this recipe at potlucks so here it is.

Its cool, refreshing and not overly sweet. Just perfect for a hot summer’s day, or if by chance there are any leftovers it’s even better the next day.

Don’t you love petrale sole? Such a lovely light and delicate fish. I couldn’t resist picking up a few fillets today at the market. Broccoli stuffed sole from BHG magazine is a great way to prepare sole, or any small flat fish such as flounder or fluke. The White fish fillets are stuffed with a broccoli and cheese based stuffing’s and then baked uncovered till done and flaky. Surely every fish lover’s delight.
