I like to think of Christmas as not only the season of carols, lights, sweets and Santa but also as the season of dips. Season of dips… has a nice ring to it doesn’t it? I think the reason that I eat so many different dips at this time of year is because there are so many parties and special occasions to make them. And we all have a spinach artichoke dip in our recipe box but do you have a Kale and Artichoke dip recipe??? Probably not. Both kale and spinach are superfoods packed with vitamins and nutrients, but who comes out as a winner? It’s actually kale. Kale is packed with more vitamins and nutrients than spinach. And if you sneak a little cheese in there just to make sure it has plenty of gooeyness as any artichoke dip should, this Kale and Artichoke Dip from Cozy Apron becomes verything a dip should be. Ingredients
- 2 heads garlic
- 3 ½ ounces kale (about 1/3 of a 10 ounce bag of cut kale)
- 12 ounces cream cheese, softened (you can gently heat in microwave for 20-30 seconds)
- 1 cup sour cream
- ¼ cup plus 2 tablespoons mayonnaise
- 6 ounces frozen artichoke hearts, thawed and finely chopped (half of a 12 ounce bag)
- 1 ¼ cups shredded, four-cheese blend (Asiago, Provolone, Parmesan, Fontina), divided use
- 1-2 tablespoons flat-leaf parsley, finely chopped
- 1 teaspoon salt
- ½ teaspoon freshly cracked black pepper
- 1 ½ teaspoons lemon juice
