Okay. Here’s the situation:
You know when you go to a Mexican restaurant and they give you one of those little bottles FULL of extra salsa? Y’all know the kind of salsa I’m talking about, right? The smooth kind. Those are my favorites. Because seriously, a little tiny bowl of salsa for a table full of people is just never going to be enough,it’s just not. There’s a lot of bad salsa out there, but this restaurant style salsa by Kim from Serving up Southern is one of my favorite recipes, though. Salsa…it just brings it out in me.
Ingredients
- 1 - 28 ounce can whole tomatoes with juice (I usually drain a little juice from can)
- 2 - 10 ounce cans Rotel (diced tomatoes and green chili peppers)
- 1/2 onion, roughly chopped
- 1 clove garlic, roughly chopped and smashed
- 1 jalapeno, seeded or not (depends on how hot you like it), roughly chopped
- 1 teaspoon sugar, or 1 teaspoons honey ( I usually use honey)
- 1/2 teaspoon salt
- 1/4 teaspoon cumin
- 1 handful cilantro
- Juice of 1/2 fresh lime
