A sure sign of spring is when you see an abundance of asparagus in your local grocery market place. Beside creamy-delicious taste asparagus is an excellent source of fiber, folate, vitamins A, C, E and K. You know by now my relation with appetizers, so this Asparagus Phyllo Appetizer from Rachael Narins makes no excuses. One thing more, phyllo dough is a wonderful thing. If you’re not familiar, it’s basically paper thin sheets of unleavened flour dough. A bit time consuming, but it’s worth it in the end.
Ingredients
- 1 Package phyllo dough, defrosted (you will not use it all)
- 1 stick unsalted butter, melted
- 1 bunch green asparagus, trimmed
- ½ cup parmesan cheese, grated
- Coarse ground black pepper
- ½ cup mayonnaise
- 1 tablespoon grated horseradish
- 1 teaspoon capers, minced
- 2 teaspoons whole seed mustard
- salt and pepper to taste
